Kenji’s panzanella salad

Recipe courtesy of: https://www.seriouseats.com/classic-panzanella-salad-recipe  and then edited with some of my additions Ingredients: 2 1/2   pounds  (1.1kg) mixed ripe  tomatoes , cut into bite-size pieces 1 large cucumber, seeded and cut into small cubes (I added this into the recipe) 2   teaspoons  (8g)  Diamond Crystal kosher salt , plus more for seasoning (use half as much if using table salt) 3/4   pound  (340g)  ciabatta  or rustic sourdough bread, cut into 1 1/2–inch cubes (about 6 cups bread cubes) 10   tablespoons  (150ml)  extra-virgin olive oil , divided 1 small  shallot , minced (about  2 tablespoons ) 2   medium cloves   garlic , minced (about 2 teaspoons) 1/2   teaspoon   Dijon mustard 2   tablespoons  white wine vinegar or  red wine vinegar 2 tablespoons capers with a little bit of their brine (I added this into the recipe too) Freshly ground black pepper ...

Wonton soup

Recipe blended from the following two: https://www.spendwithpennies.com/homemade-wonton-soup/ https://www.allrecipes.com/recipe/13199/wonton-soup/ https://thewoksoflife.com/san-xian-wontons/ Ingredients: - 1/2 pound ground pork - 1/2 pound raw shrimp (chopped finely) - 3 tbsp diced shallots - 2 tbsp chopped garlic  - 2 tbsp ground ginger - 1 tbsp Chinese rice wine - 2 tbsp soy sauce - 1 tsp brown sugar - wonton wrappers (bought frozen) - 4 cups chicken broth - 1 cup Bok choy (shredded) - 1 cup scallions (chopped) Directions: 1) Mix wontons- first 8 ingredients. Fold filling into triangles and then stick corners together. 2) Mix broth- boil chicken broth with whatever you would like to flavor it (soy sauce, etc). Add scallions and Bok choy to blanch. 3) Boil dumplings in the broth for 5-6 minutes until center is cooked through.
