Recipe taken from several sources and then combined to make my own: https://www.jocooks.com/recipes/easy-kofta-beef-or-lamb/ https://justamumnz.com/2017/09/18/beef-lamb-kofta/ https://www.everylastbite.com/whole30-kofta/#recipe Ingredients: 1 pound ground beef 1 pound ground lamb 5 cloves garlic (minced) 1 yellow onion (finely diced) 1 cup total of finely diced herbs (mint, parsley, dill) 1 tablespoon sumac [I didn't have, so I used zaatar] 1/2 teaspoon allspice 1 tablespoon cumin 1 teaspoon paprika 1 teaspoon cinnamon 1 teaspoon coriander 1/2 teaspoon ginger 1 teaspoon each salt and pepper Instructions: 1) Mix kofta meat: add meat, diced onion, minced garlic, chopped herbs, and spices into a large bowl and mixed until combined well. 2) Refrigerator for 30 minutes. 3) Place onto skewers. 4) Cook on grill for approx. 8 minutes to get char marks. Serve with Halal rice, roasted veggies (zucchini, tomato, onion), and tzatziki.
