Ingredients:

  • 1 pound ground beef
  • 1 pound ground lamb
  • 5 cloves garlic (minced)
  • 1 yellow onion (finely diced)
  • 1 cup total of finely diced herbs (mint, parsley, dill)
  • 1 tablespoon sumac [I didn't have, so I used zaatar]
  • 1/2 teaspoon allspice
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 1 teaspoon coriander
  • 1/2 teaspoon ginger
  • 1 teaspoon each salt and pepper

Instructions:

1) Mix kofta meat: add meat, diced onion, minced garlic, chopped herbs, and spices into a large bowl and mixed until combined well.
2) Refrigerator for 30 minutes.
3) Place onto skewers.
4) Cook on grill for approx. 8 minutes to get char marks.

Serve with Halal rice, roasted veggies (zucchini, tomato, onion), and tzatziki.
